Hello Fellow Veggie Lovers! Looking for a New Idea for Using up all Those Zucchinis & Eggplants!? Try my Secret Ingredient Grilled Zucchini! You won’t need a recipe for this super secret ingredient grilled zucchini!

My super secret ingredient grilled zucchini is made with the secret ingredient that I call LIQUID GOLD! Can you imagine, olive oil marinated with herbs and spices?! …and some people are just throwing it away! Can you believe it! Don’t throw it away, make secret ingredient grilled zucchini!

Liquid Gold

The “liquid gold” I’m referring to is the olive oil, herbs, and seasoning that marinated fresh mozzarella balls are packed and sold in. BelGioioso brand Fresh Mozzarella – Marinated, is my favorite. It’s called Mozzarella Ball Salad. Look for it where they sell the “fresh” mozzarella balls, pearls or logs or the specialty cheese section. You will want to find it at your local grocery, like Kroger, or Meijer, or a big box store like Costco. BelGioioso’s website has a locator you can punch your zip code into and find it, hopefully in your area.

Use the mozzarella balls on pizzas, in Caprese salads, or on pasta, or serve them up right out of the olive oil! Be sure to use the oil when the mozzarella is gone! DO NOT THROW AWAY THE LEFTOVER OIL! (You can use these delicious marinated mozzarella balls for my Copycat Air-Fryer Twin Peaks Mozzarella Bites!)

Make secret ingredient grilled zucchini by brushing it over thin slices of zucchini and grilling them.

Use that “liquid gold” on your zoodles, toasted bread, or pasta, drizzle some on steamed veggies, top your pizzas with them… Why not, you paid for it! There’s no digging in the spice cabinet, just drizzle it on right out of the tub!

I’ve even added more olive oil, salt & pepper, and sometimes grated Parmesan cheese to it. Since the cheese can go rancid past the expiration date, I recommend that you store the herbed oil in the freezer to use later!

Brush some herbed oil on slices of eggplant, squash, and zucchini then grill them. Freeze them tightly wrapped in single layers to have during the winter.

This freezes up nicely! I make moussaka with it and put it on sandwiches or casseroles in the winter.
